Easter is coming up, which means... CANDY everywhere!! While candy in moderation is OK, it's always good to keep an eye on how much sugar you are consuming. Not only does excess sugar contribute to health problems, but it inhibits you from practicing and performing at your best with that sugar crash!
If you can't get enough of those chocolate peanut butter eggs, we've got your HEALTHY alternative recipe that is SO easy to make and delicious!!
You will need:
1 cup nut butter (you can use peanut butter, almond butter, sunflower seed butter... all nut butters work great!!)
1/4 cup whole grain flour + sprinkle more in at a time if needed (we used brown rice flour)
3 tablespoons pure maple syrup or honey
1/2 cup dark chocolate chips
1 1/2 tablespoons milk of choice (dairy, almond, coconut, rice... your choice!)
Pour all ingredients for the filling into the food processor and pulse until completely combined. Shape each spoonful into an egg shape and place on a lined baking sheet and into the freezer. For the chocolate coating, pour the milk and the chocolate chips into a bowl and microwave at 20 second intervals, stirring after each interval and stop heating when the chocolate chips BEGIN to melt (stir and see if they begin to turn into a chocolate sauce texture). Do NOT burn the chocolate. Take nut mixture eggs out of the freezer and, with a spoon or fork, slowly roll each egg in the chocolate and return to the baking sheet. If the eggs begin to warm up that they don't hold their egg shape, return the sheet to the freezer and wait another 5-10 minutes before continuing. After each egg has been chocolate-covered, let them freeze for another 20-30 minutes and then place on a parchment paper sheet. You may store these in the freezer or fridge to keep their shapes.
