It's almost St. Patrick's Day and we've got a lucky charm for you! This week's #temptingtuesdaytreat is GREEN and actually a bit healthier than the regular version (with no skimp on taste!). So kiss your Irish friend, grab a pint, and enjoy this delicious #flirtfitness treat on St. Patrick's Day!
St. Patrick's Day Cupcakes (with a SECRET ingredient!)
You will need:
2 1/2 cups whole grain brown rice flour
1 1/2 cups brown sugar
1/2 cup nonfat dried milk
1 tsp baking powder
1/2 tsp baking soda
1 tsp vanilla
1 cup unsweetened applesauce
4 cups baby spinach
Preheat oven to 350 degrees. Combine all the dry ingredients in a large bowl. Puree the applesauce and spinach in a blender. (You may need to add the spinach in batches!) In an electric mixer, blend the spinach mixture and vanilla into the flour mixture for 2 minutes. Divide evenly into 18 cupcake liners (in a cupcake pan, of course). Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean. Cool completely. Proceed to frosting preparation...
Classic Vanilla Buttercream Frosting (credit: SavorySweetLife)
You will need:
1 cup unsalted butter (2 sticks, softened (but not melted!) (tip: Ideal texture should be like ice cream)
3-4 cups confectioners (powdered) sugar
¼ teaspoon sea salt
1 tablespoon vanilla extract
Up to 4 tablespoons milk of choice (or heavy cream if you want to get rich)
Beat butter for a few minutes with a mixer on medium speed. Add 3 cups of powdered sugar and turn your mixer on the lowest speed (so the sugar doesn't blow everywhere) until the sugar has been incorporated with the butter. Increase mixer speed to medium and add vanilla extract, salt, and 2 tablespoons of milk/cream and beat for 3 minutes. If your frosting needs a more stiff consistency, add remaining sugar. If your frosting needs to be thinned out, add remaining milk 1 tablespoons at a time. With your cooled cupcakes, simply frost each one like an artist and enjoy every bite!!
